One of my favorite classes this session was when our Taste Buddies’ chefs revived your classic lunch items.
We started by making some delicious sushi sandwiches (thank you to martastewart.com). First, flatten one slice of plain white bread with a rolling pin. Mix together 3 tablespoons cream cheese and 1½ tablespoons sour cream; spread over slices. Lay two carrot and two cucumber matchsticks at the bottom of each slice — let hang over edges. Roll up bread, pressing gently to seal, then cut each roll in four equal pieces. Ta da!
We also whipped up our own potato and carrot chips. Chop carrots and potatoes into thin slices. Place chips into a large Ziploc baggie. Pour vegetable oil into the bag and shake it up! Spray a microwave safe dinner plate with cooking spray and place chips onto the plate. Put into the microwave for 3 to 5 minutes. You can also put them into the oven at 375°F for 20 minutes (a fine replacement for your average potato chip).
For dessert we made some Fruit Sushi or Frushi! Chop a banana into chunks and wrap each chunk around a piece of fruit leather. To keep it in place, we took one chopstick and poked it through the fruit leather and banana.
